My grandmother sold pan dulce out of her kitchen in Mexico City. My mom learned from her, and made cakes for our entire neighborhood for 30 years. I learned from both β and added the French laminations my mom never had time for.
Sweet Hour opened in 2019 as a tribute to them. Every morning I wake up at 4:30, walk into the kitchen, and try to make pastries that would make my grandmother proud.
